Make Same Day
Serves 6
Ingredients:
- 1 tablespoon unflavored gelatin
- 3/4 cup cold water
- 2 teaspoons instant coffee
- 4 egg yolks
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 4 egg whites
- 1 cup heavy cream, whipped
- whipped cream for garnish
- nutmeg for garnish
Instructions:
- Soften gelatin in 1/4 cup water.
- Dissolve coffee in remaining 1/2 cup cold water.
- Beat egg yolks until pale yellow.
- Mix with coffee, 1/2 cup sugar, and salt.
- Cook in top of double boiler over hot (not boiling) water until custard thickens.
- Remove from heat.
- Add gelatin, stirring until it dissolves.
- Add vanilla.
- Cool.
- Beat egg whites until stiff.
- Fold in remaining 1/2 cup sugar.
- Combine coffee custard and whipped cream.
- Fold in egg whites.
- Pour into 4-cup mold and chill 2-3 hours until firm.
- Unmold souffle onto round platter.
- Garnish with whipped cream and sprinkle nutmeg on top.
