Make Ahead
Serves 8
Ingredients:
- 9″ baked pie shell
- 4 eggs, separated
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon grated lime rind
- 1/3 cup lime juice
- 4 tablespoons water green food color
- 1 tablespoon unflavored gelatin
- 1 cup heavy cream, whipped
- whipped cream for garnish
Instructions:
- Combine lightly beaten egg yolks with 1/2 cup sugar, salt, lime rind (save some rind for garnish), lime juice and 2 tablespoons water.
- Add a few drops green food color.
- Cook over boiling water, stirring constantly, until mixture thickens.
- Soften the gelatin in 2 tablespoons cold water and add to the mixture.
- Remove from heat and cool until mixture begins to thicken.
- While cooling, mix the egg whites and remaining 1/2 cup sugar, and beat until stiff.
- Fold the lime gelatin mixture, whipped cream and the beaten egg whites together until blended.
- Turn into the prepared pie shell.
- Chill until firm.
- When ready to serve, garnish with whipped cream and grated lime rind.
