Make Ahead
Serves 8-10
Ingredients:
- 6 egg whites
- 3/4 teaspoon cream of tartar
- 2 teaspoons vanilla
- 1-1/2 cups sugar
- 3/4 cup walnuts or pecans, chopped
- 2 cups saltines or Ritz crackers, broken into 1/2″ pieces
- 1 can (16 ounces) cherry (or other) pie filling
- whipped cream
Instructions:
- Preheat oven to 350°.
- Beat egg whites until frothy.
- Add cream of tartar and continue beating.
- Add vanilla.
- Gradually add sugar.
- When stiff, fold in nuts and crackers.
- Pour into buttered 9″ x 13″ pan.
- Bake approximately 20 minutes. Do not overbake.
- Cool completely.
- Cover with pie filling and whipped cream.
- Chill thoroughly.
