Carrot Cake Recipe

This cake is also good without the frosting, either plain or with ice cream.

Ingredients:

Cake

  • 2 cups sugar
  • 1-1/2 cups vegetable oil
  • 4 eggs, beaten
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 cup chopped walnuts
  • 3 cups finely grated carrots

Frosting

  • 6 ounces cream cheese, softened
  • 1/3 cup butter or margarine
  • 1-1/2 teaspoons vanilla
  • 2 cups confectioners’ sugar

Instructions:

  1. Preheat oven to 350°.
  2. Beat together sugar and oil.
  3. Add well-beaten eggs and 1 teaspoon vanilla and mix well.
  4. Sift together and gradually add flour, baking powder, baking soda and cinnamon.
  5. Carefully fold in walnuts and grated carrots.
  6. Bake for 40 minutes in a 9″ x 12″ pan or 50 minutes in a bundt pan.
  7. Cream together softened cream cheese and butter.
  8. Add confectioners’ sugar and mix well.
  9. Add 1-1/2 teaspoons vanilla.
  10. Spread on cooled cake.
