Freezes Well
Serves 12
Ingredients:
- 2-1/2 cups sugar
- 1/2 cup shortening
- 1/2 cup margarine
- 4 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon lemon extract
- 3 cups flour
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- confectioners’ sugar for sprinkling
Instructions:
- Preheat oven to 325 degrees.
- In a mixing bowl, cream sugar, shortening and margarine until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Stir in vanilla and lemon extract.
- Thoroughly stir together flour and baking soda.
- Add to creamed mixture alternately with the buttermilk, beating well after each addition, starting and ending with the flour mixture.
- Pour into a greased and floured 10″ tube pan and bake for 1-1/4 hours or until a toothpick inserted in cake comes out clean.
- Cool in pan for 10 minutes.
- Sprinkle with confectioners’ sugar.
