Partially Make Ahead
Serves 8
Ingredients:
- 5 whole eggs
- 5 egg yolks
- 1/2 cup sugar
- 1/2 cup flour
- 1/2 teaspoon baking powder
- 1 cup cocoa
- 4 ounces butter, melted
- 2 ounces sweet chocolate
- 1/2 cup simple syrup flavored with a drop of kirsch (see note below)
- 1 pint heavy cream, whipped and flavored with 2 tablespoons kirsch
- 1 can (16 ounces) pitted black bing cherries
Instructions:
- Preheat oven to 350°.
- Beat eggs, egg yolks and sugar together.
- Blend in flour, baking powder and cocoa.
- Add melted butter and mix well.
- Butter an 8″ x 2″ cake pan.
- Pour in cake mixture.
- Bake for 25-30 minutes or until a cake tester inserted in the middle comes out clean.
- Turn cake out onto a rack and allow to cool.
- When completely cool, slice into 3 layers.
- Spoon flavored simple syrup over each layer and allow to soak in. Note: Simple syrup is made by boiling 1 cup sugar and 2 cups water together for 5 minutes. Cool and flavor as desired.
- Place 2 heaping tablespoons of the whipped cream on each layer, and smooth over with a flat knife or spatula.
- Drain cherries well and place half of them on bottom layer of cake.
- Place second layer on top and add remaining cherries.
- Place third layer, cream side up, on top.
- Smooth the balance of the whipped cream over the top and sides of cake.
- Shave sweet chocolate with a vegetable peeler and sprinkle over top and sides of cake so that it adheres to whipped cream.
- Refrigerate until served.
