Make Ahead
Serves 12
Ingredients:
Filling
- 1 large can (29 ounces) apricots
- 2 3-ounce packages orange gelatin
- 2 cups boiling water
- 1 large can (20 ounces) crushed pineapple, drained
- 1 cup miniature marshmallows
Topping
- 1/2 cup sugar
- 3 tablespoons flour
- 1 egg, beaten
- 1 cup apricot juice
- 1 tablespoon butter
- 1 cup whipping cream
- 3/4 cup grated cheddar cheese
Instructions:
- Drain apricots, reserving enough juice to make 2 cups.
- Chop apricots.
- Dissolve gelatin in boiling water.
- Add 1 cup apricot juice.
- Chill until slightly thickened.
- Add apricots, pineapple and marshmallows.
- Pour into an 8″ square dish and chill until firm.
- Combine sugar and flour.
- Add egg, reserved apricot juice and butter.
- Cook in top of double boiler until thick.
- Using a wire whisk, stir well so lumps won’t form.
- Remove from heat and cool thoroughly.
- Whip cream and fold into cooled mixture.
- Spread over top of congealed apricot mixture.
- Sprinkle with grated cheddar cheese just before serving.
