Serves 8-10
Ingredients:
- 10″ unbaked pie shell
- 2-1/2 pounds green cooking apples
- 1 cup sugar
- 1/2 cup plus 2 tablespoons flour
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 2 tablespoons lemon juice
- 1/2 cup very soft butter or margarine
- large brown paper bag
Instructions:
- Preheat oven to 400°.
- Peel and quarter apples.
- Cut each quarter into 4 pieces, making approximately 7 cups of good-sized chunks (not slices).
- Mix chunks with 1/2 cup sugar, 2 tablespoons flour, nutmeg and cinnamon, until each chunk is coated well.
- Fill pie shell with apple chunks, piling high in center of pan and then sprinkle with lemon juice.
- Thoroughly mix 1/2 cup each sugar, flour, and butter into a soft paste. Spread over chunks.
- Place pie in brown bag.
- Poke a few small holes in top of bag.
- Bake on rack in center of oven for 1 hour.
- Cool 10 minutes.
