Make Ahead
Serves 8
Ingredients:
- 9″ unbaked pie shell
- 3 eggs
- 1 cup dark brown sugar, packed
- 1/2 cup dark corn syrup
- 1/4 teaspoon salt
- 6 tablespoons rum
- 1/4 cup butter, melted
- 1 cup chopped pecans
- 1/2 cup heavy cream
- 1 tablespoon sugar
Instructions:
- Preheat oven to 375°.
- Beat eggs until light colored.
- Add brown sugar, syrup, salt and 4 tablespoons of rum.
- Stir until dissolved.
- Add butter and pecans. Mix.
- Pour into shell and bake 40 minutes or until knife inserted in center of pie comes out clean. Cool. Serve with heavy cream whipped with remaining 2 tablespoons of rum and 1 tablespoon of sugar.
