This delicious New Zealand dessert may also be served in parfait or champagne glasses and garnished with whipped cream and chocolate curls.

Make Ahead
Serves 8
Ingredients:
- 10″ graham cracker pie shell
- 1 can (13 ounces) evaporated milk
- 1 tablespoon unflavored gelatin
- 1/2 cup hot water
- 1 cup sugar
- 1 tablespoon cocoa
- 1 tablespoon instant coffee
- 1 tablespoon rum
- 1/2 cup walnuts, chopped finely
- whipped cream for topping
Instructions:
- Chill can of milk at least 8 hours.
- Dissolve gelatin in 1/2 cup hot water.
- Whip chilled milk until thick, then slowly add sugar, cocoa, coffee, gelatin and rum.
- Whip again until thick and creamy.
- Add the chopped nuts and pour into graham cracker crust.
- Chill.
- Serve garnished with whipped cream.
Note: If mixing bowl and beaters are chilled overnight in freezer, batter will thicken more easily.
