Freezes Well
Serves 8-10
Ingredients:
- 2 cups sugar
- 1-1/4 cups vegetable oil
- 1-1/2 cups pumpkin puree
- 4 eggs
- 3 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1/2 cup seedless raisins
- 1/2 cup golden raisins
- 1 cup chopped walnuts or pecans
Instructions:
- Preheat oven to 350 degrees.
- Beat sugar, oil and pumpkin at medium speed until well mixed.
- Add eggs, one at a time, beating well after each addition.
- Sift flour, baking powder, baking soda, cinnamon, and salt and fold into cake batter.
- Stir in raisins and nuts.
- Pour into a greased 10″ tube pan and bake for 1-1/4 hours, or until done. Do not open oven before 1 hour has passed.
- Let cool slightly before turning out onto a rack.
