Ingredients:
- 2 cups flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup butter
- 6-8 plums, pitted and quartered
- 1 teaspoon cinnamon
- 2 egg yolks
- 1 cup heavy cream
Instructions:
- Preheat oven to 400o.
- Combine flour, 1/4 cup sugar, salt, baking powder and butter and mix with a pastry blender until crumbs are formed.
- Press the crumbs in the bottom and sides of an ungreased 8″ square baking pan.
- Lay plums on top and sprinkle with 3/4 cup sugar and cinnamon.
- Bake for 15 minutes.
- Reduce heat to 375°.
- Remove from oven, mix the 2 egg yolks with the heavy cream, and pour on top of the baked plums.
- Return to oven and continue baking for 30 minutes.
- Serve warm.
