Freezes Well
Serves 6
Ingredients:
- 9″ graham cracker pie shell
- 1 package (3 ounces) lime gelatin
- 1 #2 can crushed pineapple
- 1 pint vanilla ice cream
Instructions:
- Drain pineapple well, adding enough water to the reserved juice to make 1-1/2 cups.
- Heat the pineapple juice in a 2-quart saucepan and add gelatin, stirring well.
- Remove from heat and add ice cream by spoonfuls, stirring after each addition, until melted.
- Chill mixture until thickened but not set.
- Fold in 1 cup of drained pineapple and then pour into pie shell.
- Chill until firm and garnish with remaining pineapple.
