Pineapple Parfait Pie Recipe

Ingredients:

  • 9″ graham cracker pie shell
  • 1 package (3 ounces) lime gelatin
  • 1 #2 can crushed pineapple
  • 1 pint vanilla ice cream

Instructions:

  1. Drain pineapple well, adding enough water to the reserved juice to make 1-1/2 cups.
  2. Heat the pineapple juice in a 2-quart saucepan and add gelatin, stirring well.
  3. Remove from heat and add ice cream by spoonfuls, stirring after each addition, until melted.
  4. Chill mixture until thickened but not set.
  5. Fold in 1 cup of drained pineapple and then pour into pie shell.
  6. Chill until firm and garnish with remaining pineapple.
