Lemon Refrigerator Pie Recipe

Ingredients:

  • 1 graham cracker pie shell
  • 1 can (14 ounces) condensed milk
  • 1/2 cup lemon juice
  • grated rind of 1 lemon
  • 1/2 cup heavy cream
  • 1 tablespoon confectioners’ sugar

Instructions:

  1. Make graham cracker crust, reserving 1 tablespoon of the mixture to sprinkle on top of the finished pie.
  2. Mix condensed milk, lemon juice and rind.
  3. Whip cream with confectioners’ sugar and add to lemon mixture.
  4. Fill pie shell and garnish with reserved graham cracker crumbs.
  5. Chill in refrigerator at least 3 hours.
