Mystery White Fruitcake Recipe

Serves 14-16

Ingredients:

  • 1 package white or yellow cake mix, baked
  • 1 cup candied pineapple
  • 1 cup candied lemon peel
  • 1 cup candied orange peel
  • 1 cup candied whole red cherries
  • 1 cup citron
  • 1-1/2 cups white seedless raisins
  • 1 cup shredded coconut
  • 4-1/2 cups blanched almonds, chopped coarsely
  • 1 box fluffy white frosting mix

Instructions:

  1. Break up baked cake.
  2. Cut candied fruit and citron into small pieces.
  3. Mix cake with cut-up fruit, raisins, coconut and nuts.
  4. Make frosting according to package directions and mix with cake.
  5. Pack tightly into a foil-lined 10″ tube pan (or two 9″ x 5″ x 3″ loaf pans).
  6. Cover with foil and chill in refrigerator at least 24 hours.
  7. Store in refrigerator.
