Make Ahead
Serves 14-16
Ingredients:
- 1 package white or yellow cake mix, baked
- 1 cup candied pineapple
- 1 cup candied lemon peel
- 1 cup candied orange peel
- 1 cup candied whole red cherries
- 1 cup citron
- 1-1/2 cups white seedless raisins
- 1 cup shredded coconut
- 4-1/2 cups blanched almonds, chopped coarsely
- 1 box fluffy white frosting mix
Instructions:
- Break up baked cake.
- Cut candied fruit and citron into small pieces.
- Mix cake with cut-up fruit, raisins, coconut and nuts.
- Make frosting according to package directions and mix with cake.
- Pack tightly into a foil-lined 10″ tube pan (or two 9″ x 5″ x 3″ loaf pans).
- Cover with foil and chill in refrigerator at least 24 hours.
- Store in refrigerator.
