Make Ahead
Yield: 5 dozen
Ingredients:
- 2 egg whites at room temperature
- 1/8 teaspoon salt
- 1/8 teaspoon cream of tartar
- 3/4 cup sugar
- 1/2 teaspoon vanilla
- 1 package (6 ounces) semi-sweet chocolate chips
- 1 cup chopped nuts
- 3 tablespoons crushed peppermint candy
Instructions:
- Preheat oven to 250°.
- In a small bowl, with an electric mixer at high speed, beat the egg whites until foamy.
- Add salt and cream of tartar and continue beating until soft peaks form.
- Add sugar, 1 tablespoon at a time, beating well after each addition.
- When meringue is stiff, fold in vanilla, chocolate chips, nuts and crushed peppermint.
- Drop by teaspoonfuls onto a lightly greased cookie sheet and bake for 40 minutes.
- Cool on a wire rack and store in an airtight container.
