Melba Sauce Recipe

Make Ahead
Serves 4-6

Ingredients:

  • 1 package (10 ounces) frozen raspberries
  • 1/2 cup currant jelly
  • 1-1/2 teaspoons cornstarch
  • 1 tablespoon cold water

Instructions:

  • Place raspberries in saucepan and allow to thaw.
  • Mash berries with a spoon; add jelly and bring to boil over low heat.
  • Mix cornstarch with water.
  • Add to berries and cook, stirring constantly until clear.  Cool.
  • Serve over peach halves and ice cream for peach melba, or as above for pineapple parfait.
