Make Ahead
Serves 4-6
Ingredients:
- 1 package (10 ounces) frozen raspberries
- 1/2 cup currant jelly
- 1-1/2 teaspoons cornstarch
- 1 tablespoon cold water
Instructions:
- Place raspberries in saucepan and allow to thaw.
- Mash berries with a spoon; add jelly and bring to boil over low heat.
- Mix cornstarch with water.
- Add to berries and cook, stirring constantly until clear. Cool.
- Serve over peach halves and ice cream for peach melba, or as above for pineapple parfait.
