Make Ahead
Serves 8-10
Ingredients:
- 1 package (3 ounces) lime gelatin
- 1-1/4 cups boiling water
- 1/3 scant cup sugar
- 1/4 cup lemon or lime juice
- grated rind of 1 lemon
- 1 large can evaporated milk, chilled in freezer 1 hour
- green food color (optional)
- 1 package (about 8 ounces)
- chocolate wafers, crushed
Instructions:
- Dissolve gelatin in boiling water.
- Add sugar, juice and grated rind.
- Mix thoroughly and refrigerate until slightly thickened.
- In a chilled bowl with chilled beaters, whip the evaporated milk until stiff.
- Fold in gelatin mixture.
- Add a few drops of green food color, if desired.
- Pour into a buttered 10″ x 14′ pan which has been lined with the crushed chocolate wafers.
- Sprinkle top with additional chocolate crumbs and chill several hours or overnight.
