Lemon Sponge Pudding Recipe

Ingredients:

  • 3 tablespoons flour
  • 3 tablespoons butter
  • 1 cup sugar
  • 2 eggs, separated
  • 1 cup milk
  • juice of 1 lemon
  • grated rind of 1 lemon
  • whipped cream for garnish

Instructions:

  1. Preheat oven to 350°.
  2. Combine flour, butter and 3/4 cup sugar.
  3. Add beaten egg yolks, milk, lemon juice, and rind.
  4. Beat egg whites until stiff, gradually beating in remaining 1/4 cup sugar.
  5. Fold into lemon mixture.
  6. Pour into a buttered loaf pan and place in a pan of hot water.
  7. Bake for 1 hour.
  8. Refrigerate.
  9. Top with whipped cream to serve.
