Lemon Fluff Recipe

Make Ahead
Serves 4

Ingredients:

  • 4 egg yolks
  • 1/2-3/4 cup sugar
  • grated rind of 2 lemons
  • 1 envelope unflavored gelatin
  • 1/2 cup cold water
  • juice of 2 lemons
  • 4 egg whites
  • 1 cup heavy cream, whipped

Instructions:

  1. Beat egg yolks with sugar until yellow and fluffy.
  2. Add grated lemon rind.
  3. In a small saucepan, sprinkle gelatin over cold water, then heat over very low flame (no more than 3 minutes).
  4. Cool slightly.
  5. Add lemon juice.
  6. Add this to egg yolk mixture.
  7. Beat egg whites until very stiff.
  8. Carefully fold into egg yolk mixture.
  9. Fold whipped cream into mixture.
  10. When folding together, be sure to go to bottom of pan with a big spoon.
  11. Pour into a 2-quart souffle dish and chill until set.
