Make Ahead
Serves 4
Ingredients:
- 4 egg yolks
- 1/2-3/4 cup sugar
- grated rind of 2 lemons
- 1 envelope unflavored gelatin
- 1/2 cup cold water
- juice of 2 lemons
- 4 egg whites
- 1 cup heavy cream, whipped
Instructions:
- Beat egg yolks with sugar until yellow and fluffy.
- Add grated lemon rind.
- In a small saucepan, sprinkle gelatin over cold water, then heat over very low flame (no more than 3 minutes).
- Cool slightly.
- Add lemon juice.
- Add this to egg yolk mixture.
- Beat egg whites until very stiff.
- Carefully fold into egg yolk mixture.
- Fold whipped cream into mixture.
- When folding together, be sure to go to bottom of pan with a big spoon.
- Pour into a 2-quart souffle dish and chill until set.
