Make Ahead
Yield: 3 dozen
Ingredients:
- 1 cup sugar
- 1 cup brown sugar
- 1 cup shortening or half butterĀ and half shortening
- 2 eggs
- 1 cup raisins
- 1/3 cup water
- 1 teaspoon baking soda
- 3 cups flour
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 cup walnuts, chopped
- 1/2 cup flaked coconut
Instructions:
- Preheat oven to 400 degrees.
- Cream together sugars and shortening and add eggs.
- Cover raisins with water and boil gently until tender.
- Drain raisins, reserving water.
- Measure 1/3 cup raisin water and add baking soda.
- Stir until dissolved.
- Add raisins to creamed mixture.
- Sift flour, salt and cinnamon together.
- Add alternately with raisin water to creamed mixture.
- Stir in vanilla, walnuts and coconut.
- Place dough on a greased cookie sheet in 2 narrow strips about 1-1/2″ wide, the length of the pan.
- Bake for 12 minutes.
- Cut into bars, cool on rack, and store in an airtight container.
