Frozen Apricot Crème Recipe

Ingredients:

  • 2-1/2 cups canned apricots
  • 2 tablespoons apricot liqueur or light rum
  • 2 cups heavy cream, whipped
  • 1/4 cup sugar (optional)

Instructions:

  1. In blender, mix apricots with juice and liqueur until smooth.
  2. Fold in whipped cream.
  3. Taste, and add sugar if more sweetness is desired.
  4. Freeze until thickened but not hard, stirring occasionally while it is setting.
  5. Refrigerate about 1 hour.
  6. Serve in champagne or parfait glasses.
