Serves 6
Ingredients:
- 2-1/2 cups canned apricots
- 2 tablespoons apricot liqueur or light rum
- 2 cups heavy cream, whipped
- 1/4 cup sugar (optional)
Instructions:
- In blender, mix apricots with juice and liqueur until smooth.
- Fold in whipped cream.
- Taste, and add sugar if more sweetness is desired.
- Freeze until thickened but not hard, stirring occasionally while it is setting.
- Refrigerate about 1 hour.
- Serve in champagne or parfait glasses.
