Make Ahead
Serves 12
Ingredients:
- 12 baked tart shells
- 1 package (3-1/4 ounces) vanilla pudding mix
- 1 envelope unflavored gelatin
- dash of ground nutmeg
- 3 cups fresh eggnog
- 1/4 cup light rum
- 1/2 cup whipping cream, whipped
Instructions:
- In saucepan, combine pudding mix, gelatin and nutmeg. Add eggnog.
- Cook according to pudding package directions.
- Remove from heat; stir in rum.
- Chill until partially set.
- Turn into large mixing bowl.
- Beat with electric mixer until fluffy.
- Fold in whipped cream.
- Chill until mixture mounds.
- Pile into 12 tart shells.
- Chill.
