Serves 6-8
Ingredients:
- 1 package (6 ounces) semi-sweet chocolate chips
- 2 tablespoons butter
- 2 cups Rice Krispies
- 1 quart ice cream, softened to spreading consistency
Instructions:
- In the top of a double boiler, melt chocolate chips and butter.
- Add Rice Krispies, stirring to make sure all the cereal is coated with chocolate.
- Pour into a 9″ pie tin, and with the back of a spoon, shape mixture to the tin.
- Mound ice cream on top. Note: try chocolate, mint, coffee, peppermint or toasted almond ice cream.
- Freeze until ready to serve.
- Remove from freezer 15 minutes before serving.
