Make Ahead
Serves 4
Ingredients:
- 4 crepes
- 4 golden apples
- 1-1/2 cups light brown sugar
- 2 tablespoons butter
- 1/2 cup applejack
- creme Anglaise (recipe here)
- whipped cream flavored with vanilla
Instructions:
- Make 4 crepe pancakes according to your favorite recipe.
- Peel and core each apple and cut into 6 slices.
- Melt brown sugar over medium heat, being careful not to burn.
- Add apple sections and continue cooking until apples are just tender.
- When done, add 2 tablespoons butter and applejack.
- Warm each crepe in the apple syrup then roll with 6 slices of apple in each crepe.
- Mix Creme Anglaise and whipped cream together, and pour over each crepe before serving.
