Ingredients:
- 4 eggs, separated
- 2 tablespoons water
- 3/4 cup semi-sweet chocolate chips, melted and cooled
- 1/4 cup confectioners’ sugar, sifted
- 1/2 cup sour cream
- 1 tablespoon butter
- 1/2 cup whipping cream
- 2 tablespoons creme de cacao (optional)
- chocolate curls for garnish
Instructions:
- Preheat oven to 325°.
- Beat egg whites until frothy.
- Add water, beating until stiff peaks form.
- In separate bowl, beat egg yolks until lemon colored.
- Add chocolate, sugar and sour cream, beating until smooth.
- Fold yolk mixture into egg whites.
- Melt butter in a 10″ oven-proof skillet.
- Heat until a drop of water in the skillet sizzles.
- Pour mixture into skillet, spreading evenly to edges.
- Reduce heat to low and cook for 6 minutes.
- Place mixture in oven for 10-15 minutes, or until knife inserted in center comes out clean.
- Meanwhile, whip cream.
- Stir in creme de cacao, if desired.
- When omelet is done, remove from oven, loosen around edges with a knife, and invert onto warm platter.
- Sprinkle with additional confectioners’ sugar and serve with whipped cream.
- Garnish with chocolate curls, if desired.
