Chocolate Mousse Ladyfingers Recipe

Serves 8-10

Ingredients:

  • 1 package (12 ounces) semi-sweet chocolate chips
  • 1-1/2 tablespoons water
  • 4 eggs, separated
  • 2 tablespoons confectioners’sugar
  • 1 cup chopped walnuts
  • 1-1/2 pints whipping cream
  • 2 packages ladyfingers
  • shaved chocolate for garnish

Instructions:

  1. Melt chocolate chips in top of a double boiler over hot, not boiling water.
  2. Add water and blend.
  3. Remove from heat and add egg yolks, one at a time, beating well after each addition.
  4. Add sugar and walnuts and mix well.  Set aside.
  5. Beat egg whites until stiff, and fold into chocolate mixture.
  6. Whip 1 pint of cream and fold into chocolate mixture.
  7. Line a 10″ spring-form pan with split ladyfingers, covering sides and bottom.
  8. Pour in chocolate mixture and refrigerate several hours before serving.
  9. Garnish the cake with 1/2 pint cream whipped, and chocolate shavings.
