Make Ahead
Serves 8-10
Ingredients:
- 1 package (12 ounces) semi-sweet chocolate chips
- 1-1/2 tablespoons water
- 4 eggs, separated
- 2 tablespoons confectioners’sugar
- 1 cup chopped walnuts
- 1-1/2 pints whipping cream
- 2 packages ladyfingers
- shaved chocolate for garnish
Instructions:
- Melt chocolate chips in top of a double boiler over hot, not boiling water.
- Add water and blend.
- Remove from heat and add egg yolks, one at a time, beating well after each addition.
- Add sugar and walnuts and mix well. Set aside.
- Beat egg whites until stiff, and fold into chocolate mixture.
- Whip 1 pint of cream and fold into chocolate mixture.
- Line a 10″ spring-form pan with split ladyfingers, covering sides and bottom.
- Pour in chocolate mixture and refrigerate several hours before serving.
- Garnish the cake with 1/2 pint cream whipped, and chocolate shavings.
