Make Ahead
Serves 6-8
Ingredients:
Meringue
- 2 egg whites
- 1/8 teaspoon salt
- 1/8 teaspoon cream of tartar
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- 1/2 cup chopped walnuts
Filling
- 1 bar German sweet chocolate
- 3 tablespoons water
- 1 teaspoon vanilla
- 1 cup heavy cream
Instructions:
- Preheat oven to 300°.
- Beat egg whites with salt and cream of tartar until foamy.
- Add sugar, a little at a time, beating well after each addition.
- Beat until very stiff.
- Fold in 1/2 teaspoon vanilla and nuts.
- Pile into pie tin.
- With back of a spoon, build a nest with meringue, forming sides 1/2″ above pan edge.
- Bake for 50-55 minutes, checking after 40 minutes.
- Stir chocolate in water over low heat or in double boiler until melted.
- Cool until thickened; add 1 teaspoon vanilla.
- Whip cream and fold into chocolate mixture. Pile into shell.
- Chill 2 hours.
