Serves 6
Ingredients:
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 1/8 teaspoon salt
- 1 cup cherry syrup (drained from can)
- 1-1/2 cups pitted Bing (or sweet) cherries, drained
- 2 teaspoons lemon juice
- 1/4 teaspoon grated orange rind
- 1/4 teaspoon almond extract
- 1/3 cup brandy or kirsch
- 2 pints vanilla ice cream
- 1/3 cup slivered almonds, toasted (optional)
Instructions:
- Mix sugar, cornstarch, salt and cherry syrup together in blazer pan of chafing dish.
- Place over direct high flame and cook until sauce is clear and slightly thickened, stirring constantly.
- Stir in cherries, lemon juice, orange rind, extract and 2 tablespoons brandy.
- Heat.
- Place pan in water jacket to keep hot for serving.
- Before serving, place rest of brandy over sauce and ignite.
- When flame dies, spoon onto vanilla ice cream.
- Sprinkle with toasted almonds.
