Freezes Well
Serves 10
Ingredients:
- 1 package Duncan Hines Yellow Deluxe Cake mix
- 4 eggs
- 2 tablespoons vegetable oil
- 2 8-ounce packages cream cheese, softened
- 1/2 cup sugar
- 1-1/2 cups milk
- 3 tablespoons lemon juice
- 3 teaspoons vanilla
- 1 can (21 ounces) cherry or other pie filling, or fresh fruit
Instructions:
- Preheat over to 300 degrees.
- Reserve 1 cup dry cake mix. In large mixing bowl, combine remaining cake mix, 1 egg and oil. Mixture will be crumbly.
- Grease a 9″ x 13″ pan and press mixture evenly into bottom and 3/4 of the way up sides of pan.
- In same bowl, blend cream cheese and sugar together.
- Add 3 eggs and reserved cup of cake mix.
- Beat 1 minute at medium speed.
- Then at low speed gradually add milk and flavorings.
- Mix until smooth.
- Pour mixture over crust and bake for 45-55 minutes, until center is firm (you may also use two 9″ pans, baking 40-50 minutes).
- When cool, top with pie filling.
- Chill before serving.
May be stored in refrigerator, covered with foil.
