This cake is also good without the frosting, either plain or with ice cream.

Ingredients:
Cake
- 2 cups sugar
- 1-1/2 cups vegetable oil
- 4 eggs, beaten
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 cup chopped walnuts
- 3 cups finely grated carrots
Frosting
- 6 ounces cream cheese, softened
- 1/3 cup butter or margarine
- 1-1/2 teaspoons vanilla
- 2 cups confectioners’ sugar
Instructions:
- Preheat oven to 350°.
- Beat together sugar and oil.
- Add well-beaten eggs and 1 teaspoon vanilla and mix well.
- Sift together and gradually add flour, baking powder, baking soda and cinnamon.
- Carefully fold in walnuts and grated carrots.
- Bake for 40 minutes in a 9″ x 12″ pan or 50 minutes in a bundt pan.
- Cream together softened cream cheese and butter.
- Add confectioners’ sugar and mix well.
- Add 1-1/2 teaspoons vanilla.
- Spread on cooled cake.
