Freezes Well
Yield: 5 dozen
Ingredients:
- 1 package (6 ounces) butterscotch chips
- 3/4 cup butter
- tablespoons boiling water
- 1 teaspoon baking soda
- 2 cups rolled oats
- 1 cup sifted flour
- 3/4 cup sugar
- pinch of salt
Instructions:
- Preheat oven to 350 degrees.
- Melt butterscotch chips and butter in double boiler. Remove from heat.
- Mix boiling water with baking soda and add to butterscotch mixture.
- Gradually blend in remaining ingredients.
- Drop by slightly rounded teaspoonfuls onto ungreased cookie sheet.
- Bake for 10 minutes.
Note: these cookies are also good with a confectioners’ sugar glaze.
