Make Ahead

Ingredients:
Cake
- 1 cup sifted cake flour
- 1-1/2 cups sugar, sifted twice
- 1-1/2 cups egg whites (about 12 eggs)
- 1/4 teaspoon salt
- 1-1/3 teaspoons cream of tartar
- 1 teaspoon flavoring (vanilla or almond)
Frosting
- 1 pint heavy cream
- 3 egg yolks
- 1/4-1/3 cup chocolate syrup
- 1/2 cup slivered almonds for garnish
- chocolate curls for garnish
Instructions:
- Preheat oven to 325°.
- Sift flour three times with 1/2 cup sugar.
- Beat egg whites until frothy.
- Add salt and cream of tartar.
- Beat again until glossy and just stiff enough to hold a peak.
- Sprinkle 2 tablespoons of remaining sugar at a time and gently beat in.
- Fold in flavoring.
- Sift 2 table-spoons at a time of flour and sugar mixture over egg white mixture, then fold in gently.
- Repeat until folded thoroughly.
- Cut through batter with a spatula to remove air bubbles.
- Bake in an ungreased angel food pan for 60-65 minutes.
- Invert pan to cool.
- When cool, loosen cake with thin-bladed knife.
Angel Food Cake Frosting
- Slice angel food cake into 3 equal layers.
- Whip cream.
- Beat egg yolks and add chocolate syrup, then add this to the whipped cream.
- Frost all layers and chill for several hours.
- Garnish with slivered almonds and chocolate curls.
