Freezes Well
Yield: 6-8 dozen
Ingredients:
- 2 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1-1/2 cups uncooked oats
- 1 cup raisins
- 1 cup coconut
- 1 cup chopped walnuts
- 1 cup dates, chopped
Instructions:
- Preheat oven to 375°.
- Combine flour, baking powder and salt. Set aside.
- Cream shortening with the sugars until light.
- Add the eggs, one at a time, beating well after each addition.
- Add vanilla, then stir in the dry ingredients.
- Combine oats, raisins, coconut, walnuts and dates, and stir into the batter mixing well.
- Shape into small balls and place on a greased cookie sheet about 2″ apart.
- Bake for 12 minutes.
