Ambrosia Cookies Recipe

Ingredients:

  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1-1/2 cups uncooked oats
  • 1 cup raisins
  • 1 cup coconut
  • 1 cup chopped walnuts
  • 1 cup dates, chopped

Instructions:

  1. Preheat oven to 375°.
  2. Combine flour, baking powder and salt.  Set aside.
  3. Cream shortening with the sugars until light.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Add vanilla, then stir in the dry ingredients.
  6. Combine oats, raisins, coconut, walnuts and dates, and stir into the batter mixing well.
  7. Shape into small balls and place on a greased cookie sheet about 2″ apart.
  8. Bake for 12 minutes.
