Freezes Well
Serves 6-8
Ingredients:
- 4 eggs, separated
- 1 cup sugar
- 1 cup graham cracker crumbs
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 cup finely ground walnuts
- 1 cup cream, whipped andĀ flavored with vanilla and cognac
Instructions:
- Preheat oven to 375Ā°.
- Beat egg yolks with 1/2 cup sugar until pale yellow and thick.
- Add crumbs, baking powder and vanilla.
- Beat egg whites until stiff, gradually adding remaining sugar.
- Stir half the whites into the yolk mixture to lighten it.
- Add ground walnuts gently, then fold in remaining egg whites.
- Bake in a buttered 9″ square or round pan for 25 minutes.
- Serve warm or cold with flavored whipped cream.
