Serves 8

Ingredients:

  • 10″ baked pie shell
  • 6 egg yolks
  • 1/2 cup sugar
  • 1/2 cup flour
  • 2-1/2 cups milk, scalded
  • ladyfingers or sponge cake kirsch
  • fresh strawberries
  • red currant jelly
  • whipped cream, sweetened

Instructions:

  1. Beat egg yolks with sugar and flour.
  2. Stir in scalded milk.
  3. Cook over low heat, stirring constantly until mixture is smooth and thick.
  4. Cover and let cool completely.
  5. Spoon half of cooled mixture into pie shell and top with lady fingers or thin slices of sponge cake.
  6. Sprinkle cake with kirsch, then cover with remaining cooled mixture.
  7. Top with whole strawberries, hulled.
  8. Soften currant jelly in warm water, and brush the strawberries.
  9. Top with whipped cream.
