Make Ahead
Serves 8
Ingredients:
- 10″ baked pie shell
- 6 egg yolks
- 1/2 cup sugar
- 1/2 cup flour
- 2-1/2 cups milk, scalded
- ladyfingers or sponge cake kirsch
- fresh strawberries
- red currant jelly
- whipped cream, sweetened
Instructions:
- Beat egg yolks with sugar and flour.
- Stir in scalded milk.
- Cook over low heat, stirring constantly until mixture is smooth and thick.
- Cover and let cool completely.
- Spoon half of cooled mixture into pie shell and top with lady fingers or thin slices of sponge cake.
- Sprinkle cake with kirsch, then cover with remaining cooled mixture.
- Top with whole strawberries, hulled.
- Soften currant jelly in warm water, and brush the strawberries.
- Top with whipped cream.
