These Norwegian tea cookies are great for fat-free and salt-free diets.

Yield: 4 dozen
Ingredients:
- 3 eggs
- 1 cup sugar
- 2 cups flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon almond extract
- 1/2 teaspoon ground cloves
- 1/2 cup finely chopped almonds
Instructions:
- Preheat oven to 350°.
- Combine the ingredients in the order listed.
- Spread the thick dough in an oblong shape on a greased cookie sheet. Dough should be no more than 1/2″ thick.
- Bake 15 minutes or until the dough is light beige and firm to the touch in the center.
- Let cool no more than 10 minutes, then cut into 1/2″ wide strips.
- Reset the oven to low and dry out the cookies for 2 hours.
