These Norwegian tea cookies are great for fat-free and salt-free diets.

Yield: 4 dozen

Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 2 cups flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon ground cloves
  • 1/2 cup finely chopped almonds

Instructions:

  1. Preheat oven to 350°.
  2. Combine the ingredients in the order listed.
  3. Spread the thick dough in an oblong shape on a greased cookie sheet.  Dough should be no more than 1/2″ thick.
  4. Bake 15 minutes or until the dough is light beige and firm to the touch in the center.
  5. Let cool no more than 10 minutes, then cut into 1/2″ wide strips.
  6. Reset the oven to low and dry out the cookies for 2 hours.
