Make Ahead
Serves 8
Ingredients:
- juice of 1 orange
- juice of 1/2 lemon
- 1/4 teaspoon ginger
- 1 stick cinnamon
- 3 whole cloves
- 1 can (29 ounces) pear halves
- 1 cup currant jelly
- red food color
- 1 cup heavy cream
- 1/2 cup sour cream
- 2 tablespoons sugar
- 1 tablespoon vanilla
Instructions:
- Combine orange and lemon juices, ginger, cinnamon and cloves and let stand for 1-1/2 hours.
- Thoroughly drain pears. Reserve the liquid and add to orange mixture.
- Place orange mixture in a saucepan and heat until slightly thickened, then add the pears and heat through.
- Cool and chill (overnight is best).
- Beat jelly until smooth, then add a few drops of food color and 3 tablespoons of the orange mixture.
- Place pears in 8 serving dishes or a large bowl and pour over the jelly mixture.
- Whip cream until stiff, then fold in sour cream, sugar and vanilla.
- Top pears with the cream.
