Sour Cream Devonshire Pears Recipe

Serves 8

Ingredients:

  • juice of 1 orange
  • juice of 1/2 lemon
  • 1/4 teaspoon ginger
  • 1 stick cinnamon
  • 3 whole cloves
  • 1 can (29 ounces) pear halves
  • 1 cup currant jelly
  • red food color
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 2 tablespoons sugar
  • 1 tablespoon vanilla

Instructions:

  1. Combine orange and lemon juices, ginger, cinnamon and cloves and let stand for 1-1/2 hours.
  2. Thoroughly drain pears.  Reserve the liquid and add to orange mixture.
  3. Place orange mixture in a saucepan and heat until slightly thickened, then add the pears and heat through.
  4. Cool and chill (overnight is best).
  5. Beat jelly until smooth, then add a few drops of food color and 3 tablespoons of the orange mixture.
  6. Place pears in 8 serving dishes or a large bowl and pour over the jelly mixture.
  7. Whip cream until stiff, then fold in sour cream, sugar and vanilla.
  8. Top pears with the cream.
