Pineapple Parfait Recipe

Serves 4

Ingredients:

  • 1/2 cup melba sauce (recipe here)
  • 1 pint vanilla ice cream or raspberry sherbet
  • 1 cup pineapple tid-bits
  • 4 teaspoons Cointreau
  • mint sprigs for garnish

Instructions:

  1. Layer melba sauce with ice cream or sherbet in parfait glasses.
  2. Mix pineapple with Cointreau, and put over ice cream.
  3. Garnish with a mint sprig.
