Make Ahead
Serves 4
Ingredients:
- 1/2 cup melba sauce (recipe here)
- 1 pint vanilla ice cream or raspberry sherbet
- 1 cup pineapple tid-bits
- 4 teaspoons Cointreau
- mint sprigs for garnish
Instructions:
- Layer melba sauce with ice cream or sherbet in parfait glasses.
- Mix pineapple with Cointreau, and put over ice cream.
- Garnish with a mint sprig.
