Serves 4-6
Ingredients:
- 1/4 cup apricot jam
- 3 tablespoons sugar
- 1/2 cup water
- 4 large peaches, sliced
- 1 teaspoon lemon juice
- 1/4 cup brandy
- 1 quart vanilla ice cream
Instructions:
Note: 1 can (29 ounces) peach slices, drained, may be used instead of fresh peaches. Substitute 1/2 cup reserved syrup instead of sugar and water.
- Combine jam, sugar, and water in a medium saucepan.
- Simmer over low heat about 5 minutes or until- syrupy.
- Add peaches and continue cooking about 3 more minutes until almost tender.
- Stir in lemon juice.
- Heat brandy.
- Pour over peaches and ignite.
- Spoon over dishes of ice cream while still flaming.
