Peaches Flambe Recipe

Serves 4-6

Ingredients:

  • 1/4 cup apricot jam
  • 3 tablespoons sugar
  • 1/2 cup water
  • 4 large peaches, sliced
  • 1 teaspoon lemon juice
  • 1/4 cup brandy
  • 1 quart vanilla ice cream

Instructions:

Note: 1 can (29 ounces) peach slices, drained, may be used instead of fresh peaches.  Substitute 1/2 cup reserved syrup instead of sugar and water.

  1. Combine jam, sugar, and water in a medium saucepan.
  2. Simmer over low heat about 5 minutes or until- syrupy.
  3. Add peaches and continue cooking about 3 more minutes until almost tender.
  4. Stir in lemon juice.
  5. Heat brandy.
  6. Pour over peaches and ignite.
  7. Spoon over dishes of ice cream while still flaming.
