Fresh Rhubarb Pie Recipe

Ingredients:

  • pastry for 9″ double-crust pie
  • 3 cups fresh rhubarb
  • 1 cup sugar
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly grated orange rind
  • 2 tablespoons butter

Instructions:

  1. Preheat oven to 450°.
  2. Line a 9″ pie tin with bottom crust.
  3. Cut rhubarb into 1″ pieces and combine with sugar, flour, salt and orange rind.
  4. Pour into bottom crust dot with butter and cover with top crust.
  5. Bake at 450° for 10 minutes.
  6. Reduce heat to 350° and continue to bake for about 30 minutes.
