Make Ahead
Serves 8
Ingredients:
- pastry for 9″ double-crust pie
- 3 cups fresh rhubarb
- 1 cup sugar
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon freshly grated orange rind
- 2 tablespoons butter
Instructions:
- Preheat oven to 450°.
- Line a 9″ pie tin with bottom crust.
- Cut rhubarb into 1″ pieces and combine with sugar, flour, salt and orange rind.
- Pour into bottom crust dot with butter and cover with top crust.
- Bake at 450° for 10 minutes.
- Reduce heat to 350° and continue to bake for about 30 minutes.
