Partially Make Ahead
Serves 8
Ingredients:
- 3 cups heavy cream
- 6 egg yolks
- 6 tablespoons sugar
- 1 teaspoon vanilla
- 1/2 cup light or dark brown sugar
Instructions:
- Scald cream.
- In top of double boiler, with whisk, beat egg yolks with sugar until blended.
- Slowly stir in cream.
- Cook until hot (not boiling) or until mixture is as thick as heavy cream and coats the back of a spoon (about 5 minutes).
- Add vanilla and pour into an ungreased 1-1/2-quart souffle dish.
- Refrigerate until needed.
- Place souffle dish in baking pan.
- Surround with ice cubes.
- Sprinkle brown sugar on top of cream mixture and broil 3″ from heat for 1 minute or until sugar is melted.
- Serve immediately.
