Crème Brulee Recipe

Serves 8

Ingredients:

  • 3 cups heavy cream
  • 6 egg yolks
  • 6 tablespoons sugar
  • 1 teaspoon vanilla
  • 1/2 cup light or dark brown sugar

Instructions:

  1. Scald cream.
  2. In top of double boiler, with whisk, beat egg yolks with sugar until blended.
  3. Slowly stir in cream.
  4. Cook until hot (not boiling) or until mixture is as thick as heavy cream and coats the back of a spoon (about 5 minutes).
  5. Add vanilla and pour into an ungreased 1-1/2-quart souffle dish.
  6. Refrigerate until needed.
  7. Place souffle dish in baking pan.
  8. Surround with ice cubes.
  9. Sprinkle brown sugar on top of cream mixture and broil 3″ from heat for 1 minute or until sugar is melted.
  10. Serve immediately.
