Bananas Flambe Recipe

Serves 6-8

Ingredients:

  • 1/3 cup butter or margarine
  • 1/4 cup light corn syrup
  • 3 tablespoons lemon or orange juice
  • 1/4 teaspoon grated lemon or orange rind
  • 3 tablespoons brown sugar
  • 4 bananas, quartered
  • 1/4 or 1/3 cup Cointreau, brandy or rum, warmed
  • whipped cream (optional)

Instructions:

  1. Melt butter in blazer pan of chafing dish over direct high flame.
  2. Stir in corn syrup, juice, rind and brown sugar.
  3. Heat, stirring constantly.
  4. Add bananas.
  5. Spoon syrup over fruit.
  6. Turn banana pieces carefully, until glazed, about 5 minutes.
  7. Place pan in water jacket to keep hot for serving.
  8. Before serving, ladle liquor over fruit and ignite.
  9. Serve when flame dies.
  10. Top with whipped cream, if desired.
