Serve Immediately
Serves 6-8
Ingredients:
- 1/3 cup butter or margarine
- 1/4 cup light corn syrup
- 3 tablespoons lemon or orange juice
- 1/4 teaspoon grated lemon or orange rind
- 3 tablespoons brown sugar
- 4 bananas, quartered
- 1/4 or 1/3 cup Cointreau, brandy or rum, warmed
- whipped cream (optional)
Instructions:
- Melt butter in blazer pan of chafing dish over direct high flame.
- Stir in corn syrup, juice, rind and brown sugar.
- Heat, stirring constantly.
- Add bananas.
- Spoon syrup over fruit.
- Turn banana pieces carefully, until glazed, about 5 minutes.
- Place pan in water jacket to keep hot for serving.
- Before serving, ladle liquor over fruit and ignite.
- Serve when flame dies.
- Top with whipped cream, if desired.
